HOME STYLE SLENDER BRINJAL CURRY

Ingredients used in HOME STYLE SLENDER BRINJAL CURRY
• Brinjal- eggplant - 10 numbers.
• Oil - 2 tablespoons.
• Urad dal - 1 tea spoon.
• Onion(slices) - 1 cup.
• Salt - to taste.
• Ginger garlic paste - 1 tea spoon.
• Turmeric powder - 1/2 tea spoon.
• Curry leaves - 1 spring.
• Sesame seeds(roasted) - 1 tablespoon.
• Coriander powder - 1/2 tea spoon.
• Green chilies - 4 numbers.
• Coriander leaves(chopped) - 1/4 bunch.
Method:
  • Cut the brinjal into thin slices and place in water.
  • Heat oil in a pan and add urad dal, onions, a little salt, green chilies and saute it.
  • Add ginger garlic paste, turmeric powder and cover with a lid and cook for 2 minutes.
  • Add curry leaves, brinjal, coriander powder, little salt mix thoroughly and place the lid then cook it.
  • To it add sesame seeds powder, coriander leaves and mix thoroughly and cook it for 1 minute.

Now the dish is ready to serve with rice and roti.

Brinjal or Baigan can also be commonly known as eggplant, aubergine. Brinjal, is definitely a quickly harvested plant of the family Solanaceae. Its fruit has lots of nutrition and generally eaten like a veggie. The fruit along with other portions of the plant are used in traditional medicinal practises. It's indigenous to Nepal, India, Bangladesh, Pakistan and Sri Lanka.
