Ingredients used in GONGURA CHANA DAL LAUKI RICE
• Oil - as required.
• Cumin seeds - 1 tea spoon.
• Onion - 1 number.
• Salt - to taste.
• Green chilies - 2-3 numbers.
• Chana dal(soaked or boiled) - 1/2 cup.
• Turmeric - 1/2 tea spoon.
• Lauki - 1 cup.
• Sorrel leaves paste(leaves sauted in oil and blended) - 1/2 cup.
• Fresh coriander leaves - 1 cup.
• Rice - 2 cups.
Method:
Take some oil in a hot pan and add cumin seeds, onion slices, salt, green chilies and sauté for a minute. Now add chana dal, turmeric, lauki, some more salt, and mix thoroughly then add water and let it cook for few minutes with the lid on it. Mix in between and once its 80% cooked, add sorrel leaves paste. Cook it on slow flame by stirring it continuously. When the water is absorbed add boiled rice and mix it very carefully. Cover it with a lid on and let it cook for 5 more minuteson slow flame. Now switch off the flame and garnish the rice with fresh coriander leaves.
