A dessert extravaganza, Gil-e-firdaus is truly an amazing sweet dish with white pumpkins cooked with thickened milk, sugar and then garnished with elaichi powder and chopped dried fruits.

The Gil-E-Firdaus Recipe is a milk pudding made with very simple ingredients like bottle gourd and condensed milk. The translation of recipe name is ‘Clay of Paradise’. The recipe might have got its name because of its taste and flavor.

GIL-E-FIRDAUS - ROYAL KITCHEN SWEET

Ingredients used in GIL-E-FIRDAUS - ROYAL KITCHEN SWEET
• Milk - 1.5 litres.
• Sabudana/sago - 1 cup.
• Ghee - 1 tablespoon.
• Khoya - 2 tablespoons.
• Bottle gourd/grated lauki - 1 cup.
• Sugar - 2 cups.
• Cardamom powder - 2 teaspoons.
• Cashew nuts (chopped) - 8 numbers.
• Raisins - 8 numbers.
• Almonds (chopped) - 8 numbers.
• Saffron - 1/2 tea spoon.
Method:
  • Grate the bottle gourd (lauki), wash it and squeeze out the water.
  • Heat ghee in a pan, add cashew nuts, almonds, raisins, saute them till cashew nuts get colored and raisins puff up.
  • Then add grated lauki, cook it for few minutes.
  • When lauki get cooked, add milk (thick milk like rabdi) , sugar, sabudana(soaked), cook for 15 minutes on a slow flame with the lid on it.
  • Now add grated khoya, cardamom powder, mix it well and switch off the flame.
  • At last add saffron water on top.

Tasty GIL-E-FIRDAUS is ready.

Koyya are milk solids or may be substituted with rinsed Parmesan cheese.But you can buy Khova/Khoya at an Indian store.?
