Garbanzos and Swiss Chard

Ingredients used in Garbanzos and Swiss Chard
• Swiss chard leaves - 300 grams.
• Cooked garbanzos - 1 cup.
• Onion - half cup.
• Tomato paste - 2 teaspoons.
• Dry red chili - 1 number.
• Garlic - 2 cloves.
• Coriander powder - 1 tea spoon.
• Water - as required.
• Lemon - 1 number.
• Olive oil - 2 tablespoons.
• Salt - to taste.
Method:
  • In pot steam chard leaves until tender, about 5 minutes. Set leaves in colander to drain.
  • Squeeze out excess moisture and shred coarsely.
  • Crush garlic in mortar with salt, coriander and chile until thick, crumbly paste forms.
  • Heat olive oil in a panand saute onion until pale-golden.
  • Add garlic paste and tomato paste and stir into oil until sizzling.
  • Now add chard, cooked garbanzos and cook, stirring occasionally, 10 minutes.
  • Remove from heat and let stand until ready to serve.

Serve warm, at room temperature or cold with lemon wedges.
