EGGPLANT SANDWICH

Ingredients used in EGGPLANT SANDWICH
• Eggplant - 50 grams.
• Butter - 1 tablespoon.
• Green peas - 50 grams.
• Pepper powder - ½ tea spoon.
• Potato (boiled) - 100 grams.
• Salt - to taste.
• Cheese - 3 tablespoons.
• Bread - 6 slice.
• Carrot (grated) - ½ piece.
• Green chilli (chopped) - 2 numbers.
Method:
  • Cut the eggplant into small pieces and put it into the salt water.
  • Heat pan and add butter, eggplant pieces, green peas, salt, grated carrot, chopped green chili, pepper powder, saute it for 2 to 3 minutes till eggplant is slightly cooked.
  • Add boiled potatoes mix it well, then add grated cheese, mix it and switch off the flame.
  • Spread the eggplant mixture evenly among bread slices, put one piece of bread on top of the other to make a sandwich.
