Ingredients used in eggplant chutney
• Salt - to taste.
• Onion chopped - 1 big.
• Vinegar - 2 tablespoons.
• Oil - 2 tablespoons.
• Eggplant - 1 big.
• Pepper - to taste.
Method:

Boil the eggplant. Prepare vinaigrette with oil, vinegar, onion, salt and pepper. Mix well and keep aside. When eggplant is done and cooled down, peel it and crush with a fork. Mix the puree with the sauce.
