Ingredients used in Egg Stir Fry with Ridge Gourd
• Coriander powder - 1 tablespoons.
• Turmeric powder - pinch.
• Salt - to taste.
• Curry leaves - 2 springs.
• Onion (chopped ) - 1 numbers.
• Green chilies (chopped) - 3 numbers.
• Ginger (chopped) 1 inch - 1 piece.
• Cumin seeds - 1/4 tea spoon.
• Oil - 1 tablespoon.
• Ridge gourd - 250 grams.
• Chili powder - 1+1/2 tea spoon.
• Eggs - 4 numbers.
• Coriander leaves (chopped) - 1 bunch.
Method:
  • Heat oil in a pan, add cumin seeds, chopped ginger, chopped green chilies, chopped onions, curry leaves, salt, turmeric powder, saute it
  • Add chopped ridge gourd, coriander powder, chili powder, cook this for 5 minutes.
  • Then add eggs, mix it up and cook this for 2 minutes. Later, switch off the flame and add chopped coriander, mix it.
  • Serve this with roti, pulkha, naan, and rice.
