Ingredients used in Egg Cube Curry
• Coriander leaves (chopped) - 1 bunch.
• Red chilli powder - half tea spoon.
• Coriander powder - 1 tablespoon.
• Raw pistachio powder - 1 tea spoon.
• Tomato puree - half cup.
• Ginger garlic paste - 1 ½ tea spoon.
• Milk - 2 cups.
• Onion (chopped) - 1 number.
• Cumin seeds - 1 tea spoon.
• Mustard seeds - 1 tea spoon.
• Eggs - 10 number.
• Cilantro (chopped) - half bunch.
• Salt - to taste.
• Oil - as required.
Method:
  • In a bowl add onions, Cumin seeds, cilantro, redchilli powder, salt, garam masala powder along with eggs. Whisk the mixture well.
  • Transfer the mixture to another container steam it. It can be steamed in oven or the steamer.
  • Cut the steamed eggs into cubes .These cubes can be used in any kind of curry.

For Milk sauce curry :-

  • Take a pan add oil in it. Add mustard seeds allow it to crackle then add cumin seeds , onions, salt, turmeric, ginger garlic paste, raw pista powder saute well.
  • Add milk to the mixture bring it to a boil.Then add coriander powder, chilli powder, mix well.
  • Reduce the heat add tomato puree at once to avoid curdling of milk.
  • Add salt ,coriander leaves cook the sauce further. Add egg cubes at this point cook for 2 minutes.

Serve it with roti/rice.
