Drumstick and Bitter Melon Curry

Ingredients used in Drumstick and Bitter Melon Curry
• Bitter gourd - 2 numbers.
• Drumstick - 2 numbers.
• Turmeric powder - 1/2 tea spoon.
• Salt - to taste.
• Oil - 1-2 tablespoons.
• Onions - 1 numbers.
• Curry leaves - 1 springs.
• Ginger garlic paste - 1/2 tea spoon.
• Red chilly powder - 1/2 tea spoon.
• Cumin powder - 1/4 tea spoon.
• Coriander powder - 1/4 tea spoon.
• Water (as required) - 1/2 cup.
• Jaggery - 1 piece.
• Tamarind juice - 1 cup.
• Fenugreek powder - 1 pinch.
• Coriander leaves (chopped) - 1 tea spoon.
Method:
  • Take a bowl, add bitter gourd, turmeric powder, salt and mix nicely later allow it rest for 30 minutes.
  • Heat oil in a pan, add onions, curry leaves, salt and saute it.
  • Add ginger garlic paste, turmeric powder, drumstick and saute it, later cook it on slow flame.
  • Squeeze water from bitter melon and add to above pan and mix it.
  • Add red chilly powder, cumin powder, coriander powder and saute it, cook for 4 minutes on slow flame with lid on it.
  • Remove lid, add water and cook again for 2 minutes with the lid on it.
  • Remove lid, add little jaggery, tamarind juice, fenugreek powder and cook it on high flame with lid on it.
  • Check for the season and adjust salt and red chilly powder.
  • Again cook for 8 minutes with the lid on it. Transfer to a serving plate and garnish with coriander leaves.

Now drumstick and bitter melon curry are ready to serve.

Sambar can be prepared in a number of ways and it is adapted diversely in several states of south India.

 

Sambar recipe is actually a variation of dal recipe in which the dal is combined with different varieties of veggies like drumsticks, lady's finger (okra), bottle gourd, carrots, pumpkin, radish, brinjal (eggplant) etc. Also adding onions and tomatoes together with tamarind pulp to offer some tangy taste to the recipe.

 

Sambar with rice has become the main courses of both formal and daily south Indian food. Also, it is offered with idli, dosa and vada. It's not at all unusual to enjoy sambar rice with appalam
