DHANIYA EGGPLANT FRY

Ingredients used in DHANIYA EGGPLANT FRY
• Eggplant pieces - 250 grams.
• Oil - 2 tablespoons.
• Red chillies - 8 numbers.
• Chana dal - 1 tablespoon.
• Coriander seeds - 1 tea spoon.
• Onion - 1 number.
• Salt - to taste.
Method:
  • Heat oil in a pan add red chillies, chana dal, coriander seeds saute it for 5 minutes.
  • In a blender add garlic cloves, onions in this add red chilli, coriander seeds, chana dal make it into a coarse paste.
  • Heat a pan add oil once it hot add eggplant pieces, salt, prepared red chilli and coriander paste mix it well cook this for 5 minutes with the lid on.
  • After 5 minutes open the lid and cook it for 2 more minutes then switch off the flame.

Serve with sambar rice or curd rice or chapatti.

3 T oil, 8 red chili. 1/4 chana dal, 1 t cumin seeds, 1 t coriander seeds & slowly cook.  Use blender and add 5 garlic and 1 chopped onion to make a paste.  Add 4 T oil to a pan and chop soaked eggplant pieces & add salt, onion paste seasonin
