CRISPY POTATO WEDGES

Ingredients used in CRISPY POTATO WEDGES
• Corn flour - 1/2 cup.
• Rice flour - 1/2 cup.
• Salt - to taste.
• Garlic (finely chopped) - 1 tablespoon.
• Red chilly flakes - 1 tea spoon.
• Red chilly paste - 2 tablespoons.
• Lemon grass (chopped) - 1 tablespoon.
• Sugar - 1/2 cup.
• Oil - to fry.
• Potato - 6 numbers.
• Lemon juice - 1/2 tea spoon.
• Sesame seeds - 1 tablespoon.
Method:

For a dipping sauce:

  • Heat water in a pan add sugar, chopped garlic, chopped lemongrass, mix it all the sugar melts.
  • Then add chilly paste, chilly flakes, mix and squeezein some lemon juice.

Preparation of wedges:

  • First parboiled potato wedges.
  • In a bowl add an equalquantity of rice flour and corn flour,add sesame seeds, salt, red chilly paste, red chilly flakes, msg and add water make a thick paste.
  • Add potatoes toa batter and mix them, and deep fry the potatoes until golden color in fryer.

Serve hot with sauce.

In an average Indian home, you don't use electric fryers--you use good old gas chulah and karahees or a hot plate....so makes sense to use these when demonstrating how to get perfect golden brown wedges!?
