1. Wash the mushrooms in running water. Cut 6 of them into small pieces and keep aside. 2. Slice the onion and remaining mushrooms into 8 pieces each. 3. Heat a pan , add half of the butter and add the 6 sliced mushroom pieces. Saute well, cover and cook for 2 mins. 4. Add these to the milk and keep aside. 5. Now put the remaining butter in the pan. Add the bay leaf and cinnamon stick. 6. Add the sliced onion and chopped mushrooms and saute well for 2-3 mins. Do not let the onion brown. So keep the heat on low. 7. Add 1 tbsp maida and again saute well till the maida changes its colour. 8. Now slowly go on adding the water and take care that no lumps should be formed. 9. Add salt and pepper pwd. cover and let it boil for 5 mins. 10. Now remove the mushroom pieces out of it and add them to the first ones i.e. those added in the milk. 11. Strain the mixture in another pan. adjust the consistency. 12. Keep this strained mixture for boiling again. Now add the milk and mushroom pieces and let it boil for about 2 mins. Add 1 tsp sugar 13. Add the cream and check the seasoning of salt and pepper. 14. Stir it well. adjust the consistency using water as it becomes thick after adding the cream. 15. Add the coriander or parsley and mix. 16. Pour the yummy hot soup in the serving bowl and swirl a spoon of cream on it and serve hot. 17. Enjoy the soup with some cheese and onions wafers.
