Ingredients used in Coastal Style Fried Pomfret
• Fish - 1 number.
• Black pepper corns - ½ tea spoon.
• Green cardamom - 3 numbers.
• Cloves - 4 numbers.
• Cinnamon stick (1 inch) - 1 piece.
• Coriander seeds - 1 tablespoon.
• Fennel seeds - 1 tea spoon.
• Onion (sliced) - 1 number.
• Ginger (cut into small pieces) - 5 numbers.
• Garlic cloves - 6 numbers.
• Tamarind (lime size) - 1 number.
• Vinegar - 1 tablespoon.
• Turmeric powder - pinch.
• Sugar - 1 tea spoon.
• Semolina - 1/4 cup.
• All-purpose flour - 1/4 cup.
• Red chilies - 6 numbers.
• Oil - as required.
• Salt - to taste.
Method:
  • In a mixie blender, add all the spices( red chilies, coriander seeds, cinnamon stick, cardamom, black pepper, cloves, fennel seeds, sliced onion, ginger, garlic), tamarind, turmeric powder, vinegar, sugar and grind to a fine paste. Transfer the mixture in a bowl, add some salt and mix well.
  • With help of the knife, from the center, cut the fish into two equal halves. Make some light gashes vertically and horizontally over the pomfret fish.
  • Apply the masala paste well on the inner sides of the fish.
  • In a plate, take some semolina, add all-purpose flour, a pinch of salt, mix and sprinkle over the masala coated fish and tap so that the flour sticks to the masala. Turn over the other halves, apply the masala paste and sprinkle the flour mixture over it.
  • At last, shallow fry the fish in hot oil until the fish turns golden in color and crispy.

Hot & spicy Coastal style fried Pomfretis ready to serve.
