Ingredients used in Chicken in Peanut Butter
• Canned anchovy fillets - 30 grams.
• Chicken - 1.5 kg.
• Tomato paste - 2 tablespoons.
• Tomato - 1 number.
• Onion - 1 number.
• Garlic - 1 clove.
• Dried chili - 4 numbers.
• Ginger - 1 tablespoon.
• Red chili powder - 1.5 tablespoons.
• Peanut butter - 1 cup.
• Peanut oil - 2 tablespoons.
• Salt - to taste.
Method:
  • Drain oil from anchovies into Dutch oven; add peanut oil. Heat until hot. Cook chickenover medium heat until brown on all sides, about 15 minutes.
  • Remove chicken. Drain fat from Dutch oven.
  • Heat anchovies, water, tomato paste, tomatoes, onion, garlic, dried chilies, ginger, chili powder and salt to boiling in Dutch oven; reduce heat. Cover and simmer 10 minutes.
  • Add chicken; cover and simmer 45 minutes.
  • Add peanut butter and turn chicken to coat with sauce. Cover and cook until chicken is done approx10 to 15 minutes.
  • Temperwith whole chilies.

Serve hot.
