Ingredients used in Chicken in Cumin Sauce
• Onions (finely chopped) - 2 numbers.
• Tomato paste / tomato sauce - 1 can.
• Several fresh tomatoes - 4 number.
• Garlic (minced) - 4 clove.
• Cumin - 1 tea spoon.
• Black pepper - to taste.
• Salt - to taste.
• Chicken (cut into bite-sized pieces) - 1 numbers.
Method:
  • In a large stew pot, combine everything except the chicken then stir until all are mixed well.
  • Bring to a slow boil then reduce heat, cover, and simmer for about 20 minutes by stirring occasionally.
  • Then add chicken, cover and simmer for another half an hour or more, until chicken is thoroughly cooked.
  • Serve with Baton de Manioc / Chikwangue or Fufu or Rice.
