Chicken Varattiyathu or roast is one of the most commonly made dishes in Keralite homes. A wonderful dish of onions and chicken in a delicate masala makes chicken varattiyathu a must have side dish. This is a yummy chicken recipe, spicy, hot and yet crunchy with all the pieces of cut dried coconut flavoring it.

Kerala Chicken curry is a very common delicacies food favorite in South Asia particularly in India and Pakistan, Bangladesh, East Asia along with UK, Canada and also the Caribbean. Ingredients used in Chicken Curry Kerala Style Varatthiyathu
• Chicken - 500 grams.
• Bay leaf - 1 piece.
• Cloves - 4 piece.
• Cardamom - 2 piece.
• Staranise - 1 piece.
• Caraway seeds - 1/4 tea spoon.
• Cinnamon stick - 1 piece.
• Dry coconut pieces - 1/4 cup.
• Onion - 1 piece.
• Green chillies - 4 piece.
• Curry leaves - 1 tea spoon.
• Ginger garlic paste - 1 tea spoon.
• Turmeric powder - 1/4 tea spoon.
• Red chilli powder - 1 tea spoon.
• Coriander powder - 1/2 tea spoon.
• Black pepper powder - 1/4 tea spoon.
• Garam masala powder - 1/4 tea spoon.
• Tomatoes - 3 piece.
• Water - 1 cup.
• Salt - to taste.
• Coriander leaves - 1 bunch.
Method:
  • Take a pan, add oil.
  • When oil gets hot add whole garam masala, dry coconut pieces and saute it.
  • When it turns into brown color, add chopped onions, green chilies, curry leaves, and cook it till onions are slightly brown colored.
  • After that add salt, ginger garlic paste, turmeric powder, red chili powder, coriander powder, black pepper powder, garam masala, tomato pieces, and cook it.
  • When both onions and tomatoes are cooked, add chicken pieces, put the lid on and cook it for 5 minutes.
  • Then add water and cook it for 10 minutes more.
  • At the end add coriander leaves and switch of the flame.
  • Your yummy Chicken curry is ready to serve.

Serve it with a rice dish or any Indian bread.
