Ingredients used in Chicken Chettinad
• Chicken - 1000 grams.
• Curry leaves - 1 spring.
• Onion (chopped) - 3 numbers.
• Tomatoes (chopped) - 3 numbers.
• Turmeric powder - 1/2 tea spoon.
• Oil - 3 tablespoons.
• Salt - to taste.
• Coriander leaves(chopped) - 1 tablespoon.
• Coriander powder - 2 teaspoons.
• Cinnamon broken - 1 1/2 piece.
• Cloves and green cardamoms (each) - 3 numbers.
• Ginger garlic paste - 1 tea spoon.
• Mustard seeds - 1 tea spoon.
• Green chillies (chopped) - 2 numbers.
• Pepper crushed - 1 tea spoon.
• Cumin powder - 1 tea spoon.
• Cumin seeds - 1 tea spoon.
• Bay leaf - 2 numbers.
• Red chilli powder - 1 tea spoon.
Method:
  • Heat oil in a heavy-bottomed pan on medium level till hotthen add mustard seeds, cumin seeds, whole garam masala and chopped onions, salt saute it.
  • Once they are golden brown in coloradd turmeric powder, ginger garlic paste, green chillies, curry leaves mix it and cook.
  • Add chopped tomatoes, red chilli powder, coriander powder, cumin powder and cook it for 10 minutes on a medium flame.
  • and fry for about 3nbsp; minute(s) or till the oil leaves the sides of the pan.
  • Add the chicken and mix well, cover with a lid and cook for 5 to 7minutes.
  • Add crushed pepper, sprinkle salt to taste mix it and cook, till the chicken is fully tenderised.

    Garnish with finely chopped coriander leaves and serve with hot rice.
