Ingredients used in cauliflower pepper masala
• Green bell pepper - ½ numbers.
• Red chilli powder - ½ tea spoon.
• Coriander powder - ½ tea spoon.
• Turmeric powder - 1/4 tea spoon.
• Tomato puree - 1 tea spoon.
• Green chillies(slit) - 3 numbers.
• Salt - to taste.
• Onions(sliced) - 1 number.
• Garlic(chopped) - 1 tea spoon.
• Ginger(chopped) - 1 tea spoon.
• Cumin seeds - 1 tea spoon.
• Red chillies - 3 numbers.
• Cauliflower florets - 1 ½ cup.
• Red bell pepper - ½ number.
• Coriander leaves(chopped) - ½ bunch.
• Black pepper(crushed) - 1 tea spoon.
• Lemon juice - 1 tea spoon.
• Oil - 2 tablespoons.
Method:
  • Cut the cauliflower into florets and boil them with a little salt and turmeric water.
  • Once cooked, drain the water and keep aside.
  • Add oil to the pan, when it heats up, put in dry red chillies, cumin seeds, ginger, garlic, onions and a little salt. Saute all the ingredients well until they turn translucent.
  • Add green chillies, tomato puree. Sauteacute; well till the tomato puree dries off. Add turmeric powder, coriander powder, red chilli powder and mix well.
  • Add cut green and red bell peppers, boiled cauliflower florets. Saute it well until the masalas are nicely coated over the florets.
  • Add coriander leaves and freshly crushed black pepper. Saute the ingredients well.
  • Add lemon juice and stir over a high flame for few minutes.

Serve with roti, chapatti, naan or rice.

You can pre cook cauliflower,potatoes or any other firm veggies in the microwave as opposed to boiling. This way you retain flavour which can be partly lost when you boil and it is far quicker by microwave. Chop to desired size and add a tbsp of wat
