Brinjal/eggplant is a vegetable which can be cooked in combination with other vegetables in a variety of ways. This is one of my all time favourite vegetables and besides the stuffed varieties the combination with cauliflower with some seasoning ingredients tastes wonderful and is quick & easy currry to prepare.

Cauliflower and brinjal curry

Ingredients used in Cauliflower and brinjal curry
• Cauliflower - 1 number.
• Brinjal (chopped) - 1 number.
• Peas - 1 cup.
• Tomato - 1 number.
• Coriander leaves (chopped) - 1 cup.
• Cumin seeds - half tea spoon.
• Green chili - 6 number.
• Oil - 2 tablespoons.
• Salt - to taste.
• Water - as required.
Method:
  • Wash and cut cauliflower to small florets and steam until they are just tender.
  • Heat oil and add sliced brinjal and cook on a low heat for 2 - 3 minutes.
  • Then add the pea pods and continue frying for a couple of minutes.
  • Now add tomato pieces.
  • Grind green chillies,coriander and jeera.
  • 6.Add cauliflower, salt in the pan.
  • Finally, add the grounded mixture and fry for few minutes.
