Ingredients used in CASHEW NUT PAKODA
• Cashew nuts - 1 cup.
• Coriander seeds - 1 tea spoon.
• Fennel seeds - 1/2 tea spoon.
• Ajwain - 1/4 tea spoon.
• Turmeric - 1 tea spoon.
• Chilli powder - 1/2 tea spoon.
• Salt - to taste.
• Soda - pinch.
• Besan flour - 1 cup.
• Urad dal powder - 1/4 cup.
• Rice flour - 1/4 cup.
• Coriander (chopped) - 1/2 bunch.
• Mint (chopped) - 1/2 bunch.
• Curry leaves (chopped) - 2 springs.
• Ginger garlic paste - 1/2 tea spoon.
• Oil - as required.
Method:
  • Take coriander seeds, fennel seeds, ajwain put all three ingredients in a pistol and make it into coarse powder, transfer this into a bowl.
  • In this Add turmeric powder, chili powder, pinch of soda, besan flour, urad dal powder, rice flour powder, salt, chopped coriander, mint and curry leaves, 2 tablespoon of oil mix it like a shortcrust method.
  • In this add soaked cashew nuts, ginger garlic paste, mix it well and add required water and make it into a pakoda dough.
  • Heat oil in a pan and fry the pakodas in a medium flame. Serve hot.

This was delicious. I made a few changes. I make the cashews into flour, omitted the oil. Substituted asafetida and galangal for garlic paste as I am Jain. Used whey as the liquid. These are additive.
