CARROT AND GINGER SOUP

Ingredients used in CARROT AND GINGER SOUP
• Carrot roundels - 2 cup.
• Cinnamon - 2 small.
• Pepper corns - 1 tea spoon.
• Ginger finely chopped - 1 tablespoon.
• Red bell pepper cubed - 1/2 no.
• Butter - 1 tablespoon.
• All purpose flour - 1/2 tea spoon.
• Salt - to taste.
• Lemon juice - 1 tea spoon.
• Cream - 1/2 tea spoon.
• Sugar - 1/2 tea spoon.
Method:
  • Add some butter in a hot vessel and when it starts melting add cinnamon sticks, pepper corns, ginger and sauté it.
  • Now add bell pepper pieces, carrot pieces, sugar, all purpose flour and mix them.
  • Add water, salt and let it boil for 5 minute on slow flame with a teaspoon of lemon juice.
  • Once the carrots become soft switch off the flame and transfer into a blender to make a fine paste. Strain out and take out the water.
  • Let it simmer for 2-3 minutes again and add salt if needed. Switch off the flame and serve hot in soup bowl with little cream on it. Can be served with noodles, bread toast or French fries.
