Ingredients used in Brinjal Rasavangi
• Mustard seeds - 1/2 teaspoons.
• Tour dal - 1 cup.
• Pea nuts - 15 grams.
• Jaggery - 1 tablespoons.
• Coconut grated - 2 tablespoons.
• Coriander seeds - 1 tablespoons.
• Pepper corns - 8 numbers.
• Urad dal - 1 teaspoons.
• Chana daal - 1 teaspoons.
• Red chilly - 3 numbers.
• Coconut oil - 2 tablespoons.
• Tamarind juice - 1 cup.
• Turmeric - 1/4 teaspoons.
• Salt - 0 to taste.
• Egg plant - 4 numbers.
• Hing - 1 pinch.
• Curry leaves - 2 springs.
Method:
  1. Heat water in a pan add turmeric, salt, egg plant (cut them in to small pieces) and add tamarind juice, let it cook till egg plant is tender,
  2. Heat coconut oil in a pan add red chilly, chana daal, Urad dal, pepper corns, coriander seeds, cook this till golden colour, add grated coconut, cook it for few minutes, and put it in the blender make a coarse paste.
  3. nbsp;In the egg plant add jaggery, and add made masala, cook for some more minutes, then add boiled peanuts, boiled tour dal, grated coconut cook in a slow flame for 5 minutes,
  4. nbsp;Heat coconut oil in a pan add red chilly, mustard seeds, hing, curry leaves,
  5. take the tadka pure in to the egg plant curry.

I know this would change the flavour considerably but is there an alternative to peanuts? I'd love to cook this because I love eggplant but peanuts are a strict tabu in my diet.
