Ingredients used in Brinjal and Cucumber Chutney
• Coriander leaves (chopped) - 1 bunch.
• Curry leaves - bunch.
• Split urad dal - 1 tea spoon.
• Chana dal - 1 tea spoon.
• Red chilles (dried) - 3 number.
• Cumin seeds - 1 tea spoon.
• Mustard seeds - 1 tea spoon.
• Oil - as required.
• Salt - to taste.
• Tamarind - 1 tea spoon.
• Garlic - 5 number.
• Brinjal - 4 numbers.
• Green chilles - 5 big.
• Dosakai/cucumber - 1/2 number.
• Hing - pinch.
Method:
Clean Brinjal and cut into small pieces. Take a pan put oil into it add garlic, tamarind, green chillies, and cut brinjal let it cook until brinjal changes its colour. when it is done remove from the pan and put it in a blender.Blend very little Cut Cucumber into small pieces add the blended brinjal mixture into it and transfer into a bowl. Take a pan and add oil in a pan put mustard seeds, cumin seeds, red chillies dry, chana dal, split urad dal, curry leaves, pinch hing once it is done mix it toCucumber and brinjal mixture. Lastly, add salt and coriander leaves finely chopped.
