Brinjal and Cucumber Chutney

Ingredients used in Brinjal and Cucumber Chutney
• Coriander leaves (chopped) - 1 bunch.
• Curry leaves - bunch.
• Split urad dal - 1 tea spoon.
• Chana dal - 1 tea spoon.
• Red chilles (dried) - 3 number.
• Cumin seeds - 1 tea spoon.
• Mustard seeds - 1 tea spoon.
• Oil - as required.
• Salt - to taste.
• Tamarind - 1 tea spoon.
• Garlic - 5 number.
• Brinjal - 4 numbers.
• Green chilles - 5 big.
• Dosakai/cucumber - 1/2 number.
• Hing - pinch.
Method:
  • Clean Brinjal and cut into small pieces.
  • Take a pan put oil into it add garlic, tamarind, green chillies, and cut brinjal let it cook until brinjal changes its colour.
  • when it is done remove from the pan and put it in a blender.Blend very little
  • Cut Cucumber into small pieces add the blended brinjal mixture into it and transfer into a bowl.
  • Take a pan and add oil in a pan put mustard seeds, cumin seeds, red chillies dry, chana dal, split urad dal, curry leaves, pinch hing once it is done mix it toCucumber and brinjal mixture.
  • Lastly, add salt and coriander leaves finely chopped.
