Ingredients used in Black pepper Mutton chicken
• Whole garam masala - 2 numbers.
• Salt - to taste.
• Oil/ghee - as required.
• Turmeric powder - 2 teaspoons.
• Onions - 1 number.
• Garam masala powder - pinch.
• Green chillies - 15-20 numbers.
• Coriander leaves (chopped) - 11/2 bunch.
• Mint leaves (chopped) - 1 bunch.
• Cashew nuts - 2 tablespoons.
• Desicated coconut - 1 cup.
• Poppy seeds - 3 tablespoons.
• Mutton - 500 grams.
• Blak pepper powder - 3 teaspoons.
• Water - as required.
• Lime juice - 1 tablespoon.
Method:
  • Wash Mutton and keep it aside.Dry roast desicated coconut,poppyseeds and cashewnuts untill golden brown on low flame,once cooled grind to a fine thick paste adding little water at a time,and keep it aside.
  • Wash half a bunch of mint leaves, coriander leaves and remove stems of 15 green chillies and grind them too adding a pinch of salt just to retain the intense green colour of the herbs and keep it aside as well.
  • Finely chop the onion,slit remainging green chillies,chop mint,chop coriander, in a heavy base vessel add ghee or oil add whole garam masala, onions, mint leaves, coriander leaves, green chillies, add the poppy seed paste and fry until the masalaozes oil.
  • Now add the green chilli paste and cook for another 5 minutes.
  • Add turmeric ,black pepper powder and salt ,cook untill the whole masala is cooked.stirring continously.
  • Add mutton to the masala and fry untill the meat gets evenly coated,add water and cook untill the meat is cooked.
  • Add pinch of garam masala powder and garnish with chopped coriander. It will taste even better if you add lime juice as per taste.
