Ingredients used in Bitter Melon Egg Bhurji
• Bitter melon - 2 numbers.
• Salt - to taste.
• Turmeric powder - 1/2 teaspoons.
• Oil - 2-3 teaspoons.
• Cumin seeds - 1/2 teaspoons.
• Onions (chopped) - 1/2 cup.
• Curry leaves - 1 springs.
• Ginger garlic paste - 1/2 teaspoons.
• Red chilly powder - 1/2 teaspoons.
• Cumin powder - 1/4 teaspoons.
• Water - 1/4 cup.
• Tamarind juice - 1-2 teaspoons.
• Egg - 2 numbers.
Method:
Finely chop bitter melon into small pieces and add salt, turmeric powder and mix nicely and keep aside. Heat oil in a pan, add cumin seeds, onions, curry leaves, salt and saute it. Add ginger garlic paste, turmeric powder, red chilly powder, cumin powder, coriander powder and saute it. Add little water, squeeze water from bitter melon and add to it and mix nicely. Place lid and cook for 2-3 minutes on slow flame. Add little tamarind juice and mix it. Add egg and keep mix it on high flame for 2 minutes. Switch off the flame and transfer into serving bowl. Now Bitter Melon Egg Bhurji is ready to serve with roti.
