Ingredients used in baigan curry(EGURU)
• Curry leaves,urad dal,mustard seeds - 1 tablespoons.
• Tomatoes(finely chooped) - 2 small.
• Black eye peas - 1/2 cup.
• Eggplant - 1 big.
• Tamarind paste - 1/2 cup.
Method:
first..take half cup blackeyed peas put in pressure cooker.cooke till 2 whistle i high flame and simmer it for 5 min.drain the water and keep aside. cut the eggplant into cubes. then fry them in oil fr 30 second(they get cooked very fast) in a pan heat 4 tsp of oil. put urad dal,mustard seeds,redchillies,then curry leaves. when they spullter add tomatoes. add salt. cook till the wates comes out and dries. then add the tamarind paste.cook till the the smell cooke like for 2 min then u add the eggplant to it.(if the paste is too dry u can add few drops of water) then at last add the blackeyed peas. seasoning it with dhania leaves.
