APRICOT AND ORANGE CREPES

Ingredients used in APRICOT AND ORANGE CREPES
• Eggs - 1 number.
• Salt - pinch.
• Sugar - 1 cup.
• Butter - 2 tablespoons.
• Milk - 1 cup.
• All purpose flour - 1 tablespoon.
• Orange zest (grated) - 1 tea spoon.
• Apricot (slices) - half cup.
• Orange juice - 2 teaspoons.
• Orange (slices) - 1 number.
• Water - as required.
Method:

To make crepes batter:

  • Take 1 egg in a bowl and beat it.
  • To it, add sugar, milk, salt, all purpose flour, beat it nicely and keep it aside.

For the sauce:

  • In a pan, add sugar and little water. When it starts boiling, add orange zest in it.
  • Also add orange juice, apricot pieces.
  • Once the sugar is caramelized add little water in small quantities and after some boiling, switch off the flame.
  • Now add little butter, orange slices and remove it from flame.

Preparation of crepe:

  • Heat another non-stick pan then pour 1 ladle with or without greasing the pan and remove the excess batter.
  • Once it loses the pan it means it’s cooked so take it in a plate.
  • Now for stuffing it take the sauce and keep it in the middle of the crepe and make a triangle by folding it.
  • Top it up with the sauce and enjoy.
