Ingredients used in Akoori - One of the traditional Parsi
• Tomato (finely chopped) - 1 numbers.
• Green chillies (finely chopped) - 2 numbers.
• Garlic cloves (finely chopped) - 2 numbers.
• Cumin/zeera seeds - 1 tablespoons.
• Onion (finely chopped) - 1 numbers.
• Butter - 2 tablespoons.
• Eggs (whisked) - 4 numbers.
• Salt - to taste.
• Mint (pudina) - 4 springs.
• Green coriander - 1 bunch.
Method:
  • Heat butter in a frying pan, add chopped onion and fry until golden brown.
  • Add cumin seeds, garlic and green chilies, fry for a minute and then add tomatoes, mint springs, and green coriander springs.
  • Mix in the whisked eggs and cook over a medium heat until they become light and fluffy, just like scrambled eggs.
  • Serve immediately, over hot toast or on salted biscuits like Canap.
