I think the batter is too sweet that is why it is burning fast and hold the mold for a minute or so and shake it very slowly in hot oil and automatically your cookies will leave the mold.?

Never dip the Achu or mold completely in the batter, always leave a few millimeter at the top otherwise the appam won't come out in the oil. My wife uses very old and much used molds. The cookies separate from the mold just like magic.?
