Ingredients used in Vegetable Fried Rice
• Minced garlic - 1 teaspoons.
• Minced ginger root - 1/2 tablespoons.
• Vegetable broth - 1-1/2 tablespoons.
• Diced carrot - 1/2 cup.
• Peas - 1/2 cup.
• Diced onion - 1/2 cup.
• Cooked jack rabbit white enriched long grain rice, cooled - 4 cup.
• Eggs - 2 numbers.
• Sliced green onion - 2 tablespoons.
• La coy reduced sodium soy sauce - 2 tablespoons.
Method:
  • Heat wok or large non-stick skillet over high heat. Spray with cooking spray. Add garlic and ginger. Cook until lightly browned.
  • Add vegetable broth, carrot, peas and onion. Heat for one minute.
  • Add rice and cook for three minutes, tossing frequently. Push rice to the sides of the wok to form a well in the middle of the pan. Spray well with cooking spray; add egg. Cook, stirring occasionally until egg is set. Combine with rice mixture.
  • Add soy sauce and green onion. Heat for one to two minutes longer, tossing frequently.
