Spicy Vegetable Couscous

Ingredients used in Spicy Vegetable Couscous
• Couscous - 3 cups.
• Zucchini - half cup.
• Yellow squash - half cup.
• Red bell pepper - half cup.
• Carrot - half cup.
• Onion - half number.
• Garlic - 2 cloves.
• Cumin powder - half tea spoon.
• Curry powder - half tea spoon.
• Dried red chili flakes - 1/4 tea spoon.
• Black pepper powder - to taste.
• Vegetable broth - half cup.
• Parsley - 1/4 cup.
• Olive oil - 2 tablespoons.
• Salt - to taste.
Method:
  • Heat oil in a large skillet and saute zucchini, squash, red bell pepper, carrots, onion, and garlic for 5 minutes over medium heat.
  • Then add spices and cook 5 more minutes.
  • Add couscous and broth and cook 5 additional minutes.
  • Garnish with parsley.

Serve hot.
