Ingredients used in Spicy Cocunut Shrimp Curry
• Ginger-finely chopped - 1 teaspoons.
• Green chillies - 8 piece.
• Garam masala powder - 1 teaspoons.
• Cumin powder - 1 teaspoons.
• Chilli powder - 2 teaspoons.
• Corn starch - 2 tablespoons.
• Green onions-cut in small pieces - 1/2 cup.
• Green pepper-diced - 1/2 cup.
• Peas-frozen or fresh - 1 cup.
• Onions-diced - 1 cup.
• Plain yogurt - 4 tablespoons.
• Tomatoes - diced - 1.5 cup.
• Shredded coconut - 1 cup.
• Shrimp - 600 grams.
• Garlic -finely chopped - 1 teaspoons.
• Salt - to taste.
• Potatoes-diced (optional) - 1 cup.
• Oil - to fry.
• Red chillies - 2 small.
Method:
1. Devein and clean shrimp and put it in a mixing bowl. Add 2 tbsp cornstarch, salt and 1 tsp chilli powder and 4 green chillies to the shrimp. Mix well and ensure that shrimp is well coated with cornstarch and chilli powder/salt mixture. Set aside for 10 minutes and deep fry them till golder brown. 2. Make a spice blend by mixing yogurt, cumin powder, garam masal powder and salt. Mix well and set aside. 3. Heat some oil in a pan, add onions and red chillies and fry till the onions are golden brown. Add the shredded coconut, ginger, garlic, green peas, and green peppers and fry for 6-7 minutes on medium heat. [If using potatoes, add them before all other vegetables and cook them till they become soft before adding other vegetable]. 4. Add tomatoes to the pan and fry till the oil gets released from the mixture. At this point add the yogurt spice blend. Cook for a 5-6 minutes. Adjust spice/salt at this point. 5. Add the deep-fried shrimp to the mixture and cook for 10-12 minutes. Garnish with coriander leaves and serve hot with rice.
