Ingredients used in Raw mango rice
• Turmeric - 1/2 tablespoons.
• Curry leaves - 5 leaf.
• Red chilli - 2 piece.
• Green chilli - 2 piece.
• Urad daal - 1 tablespoons.
• Mustard seeds - 1 tablespoons.
• Chopped big onion - 1 cup.
• Green mango - 1 big.
• Rice - sona masuri - 1 cup.
• Asofoetida - 1 pinch.
• Oil for seasoning - 3 tablespoons.
• Salt - 2 to taste.
Method:
1. Cook rice with 1 tsp of salt. Rice should not be too soft; they need to separate like it is done for pulao 2. Peel and grate green mangos and keep aside 3. Heat oil in kadai. Add mustard, urad daal, chillies, curry leaves and fry for 30 secs 4. Add chopped onions and fry until transparent 5. Add mangos, turmeric, asofoetida and cook for 5-10 mins until mangos are soft 6. Add salt and cook for 2 mins and remove from heat 7. Add cooked rice, mix well and garnish with coriander leaves. Serve hot. Goes well with potato chips!
