Ingredients used in Pumpkin Masala
• Water - as required.
• Sugar - half tea spoon.
• Basen - 2 tablespoons.
• Chilli powder - 1 tea spoon.
• Coriander powder - half cup.
• Ginger garlic paste - 1 tea spoon.
• Curry leaves - 10 number.
• Turmeric - pinch.
• Salt - to taste.
• Onion (chopped) - 1 number.
• Cashewnuts - 10 number.
• Cumin seeds - half tea spoon.
• Mustard seeds - half tea spoon.
• Oil - as required.
• Pumpkin - 500 grams.
• Coriander leaves (chopped) - half cup.
Method:
  • Take a pan add oil, mustardseeds,cumin seeds,cashewnuts,oinion chopped mix well then add salt, turmeric,curry leaves,ginger garlic paste, mix and cook for 2minutes.
  • Then add pumpkin pieces,coriander powder,chilli powder, sugar, add little water saute it, close it with a lid and cook till pumpkin is tender.
  • Now in another pan add oil, then basen roast till golden colour.Now add roasted basen to pumpkin curry and cook for 2 or 3 minutes then finely add chopped coriander leaves chopped.

Garam masala is a mixture of almost all of the spices available. The garam masala can be dried, roasted, powdered and stored. Many of the tasty recipes ranging from kurma to vegetable side dishes as well as some subzis will receive a hot and spicy flavor each time a tsp of garam masala is added at the end. Usually garam masala is not used as the key ingredient, it is actually used to improve the taste.

 

This is the spicy and warming spice combination, and used in numerous types of meats and veggie dishes. It's always best to be added at the end of cooking, sprinkled sparingly, as not to overwhelm the dish.

 

Method to prepare:

 Garam masala has peppercorns (black & white), bay leaf, cinnamon, cardamom (black & green), cloves and sometimes star anise also.

All these are pan broiled and ground collectively to make garam masala.

 

Advantages of Garam Masala:

 The name literally indicates “hot or warm spices” which isn't to state that Garam Masala is necessarily hot or spicy.  It is known that the spices used to make Garam Masala make the body warm.  There is also medicinal along with digestive benefits.

 

Garam Masala is a wonderful anti-ageing ingredient because it contains powerful ingredients such as cinnamon, pepper, fennel etc., which are referred to as miracle elements with a lot of benefits. Increase the years to your life with Garam Masala.

I have made this dish at least a dozen times and it's always a showstopper. I like to add kasoori methi if I don't have curry leaves on hand. It's also good with a little coconut.
