Ingredients used in Chocolate sandwiches
• All-purpose flour (maida) - 1.25 cups.
• Egg - 1 number.
• Vanilla extract - 2 teaspoons.
• Cocoa powder - half cup.
• Baking soda - 3/4 tea spoon.
• Butter (softened) - 3/4 cup.
• Milk - 2 tablespoons.
• Sugar - 1 cup.
• Salt - 1/4 tea spoon.
• Confectioner's sugar - 2.5 cups.
• Food coloring (red & green) - as required.
Method:
Beat cream, butter, sugar, egg and vanilla until fluffy. In anotherbowl combine flour, cocoa powder, baking soda and salt. Add to creamed mixture. Shape dough into two 1.5thick rolls. Wrap in waxed paper. Chill for several hours. Place slices on ungreased cookie sheet. Decorate by drawing the tines of a fork across each slice. Bake at 375 F for 8-10 min. or until almost firm. Meanwhile combine filling ingredients except food coloring . Beat until spreading consistency. If desired divide filling half- half red and green. Add appropriate extract to each one. Cool cookies then spread wrong side of cookie and top with second cookie.
