Ingredients used in Mutton - Andhrawala
• Mutton - 500 grams.
• Ghee - 120 grams.
• Curd - 1 cup.
• Onions (chopped) - 2 numbers.
• Tomatoes (chopped) - 1 number.
• Cashew nuts - 25 grams.
• Cloves - 8 numbers.
• Cardamoms - 4 numbers.
• Oil - 1/4 cup.
• Cinnamon - 2 numbers.
• Salt - to taste.
• Ginger garlic paste - 2 teaspoons.
• Red chili powder - 2 teaspoons.
• Fresh coconut paste - 1 tablespoon.
• Poppy seeds paste - 1 tablespoon.
• Coriander powder - 1 tablespoon.
• Black cumin powder - 1 tablespoon.
• Green chili paste - 4 teaspoons.
• Turmeric powder - 1/2 tea spoon.
• Water - as required.
Method:
Clean mutton pieces, add ginger garlic paste, turmeric powder, red chili powder, black cumin powder, coriander powder, mix it well and keep it aside for half an hour. Heat ghee in a pan, add and saute cashew nuts till they turn into light golden colour. In the same pan, add oil, when oil heats up add cloves, cardamoms, cinnamon and saute it. Then add chopped onions, ginger garlic paste, green chili paste till you get a nice smell. Then add chopped tomato pieces and once it thickens add mutton. Cook on slow flame and when the water evaporates. Add some water, fresh coconut paste, poppy seeds paste, salt and mix it well. Transfer it in a pressure cooker for three whistles. At last, garnish with cashew nuts and coriander leaves.
