How to prepare Medallions Stir Fry:
- Eggs, boiled - 6 nos
- Carrots - 1 cup
- Cucumber - 1 cup
- Bell peppers - 1 cup
- Corn flour - 1 cup
- All-purpose flour - 1 cup
- Salt - to taste
- Water - as needed
- Oil - for deep frying
- Garlic, chopped - 1 tsp
- Ginger, chopped - 1 tsp
- Red chilli paste - 1 tbsp
- Tomato ketchup - 2 tbsp
- Soya sauce - 1 tsp
- MSG - pinch
- Pepper, crushed - 1 tsp
- Add Corn Flour and All-Purpose Flour in equal measures in a bowl. Mix it with required salt and water to make not so thick or thin batter.
- Cut the boiled eggs into halves and place them on a plate. Pour the batter on them to form a good batter coating on the eggs.
- Fry the eggs in the hot oil, till they turn into slightly fried and crsipy.
- Take a new pan and add less hot oil. Add chopped Garlic and Ginger.
- Add the Bell Pepper, Carrot, Cucumber and Red Chili paste and stir fry.
- Add Tomato Ketchup, Soya Sauce, MSG, salt and crushed Pepper and stir fry.
- Add the fried egg pieces and toss them.
