Ingredients used in KHAMAN DHOKLA
• Water - 250 ml.
• Sugar - 3 teaspoons.
• Citric acid - 2 pinch.
• Salt - to taste.
• Chickpea flour - 1 cup.
• Eno - 1/2 tablespoon.
• Mint leaves - 1/2 cup.
• Coriander leaves - 1/2 cup.
• Green chillies(chopped) - 4 numbers.
• Ground nuts - 1/2 cup.
• Lime - 1/2 slice.
• Oil - 1 tablespoon.
• Garlic - 3 numbers.
• Mustard seeds - 1/2 tea spoon.
Method:
  1. Take a bowl and add 125 ml of water, 1 teaspoon sugar, 1 pinch of citric acid mixed in little water, salt, chickpea flour mix thoroughly to make dosa batter consistency.
  2. Add eno and mix nicely later transfer it into flat bowl and place it in the steamer for 15 minutes.
  3. Cut the dokla into pieces.
  4. Take the mixie jar and add mint leaves, coriander leaves, 1 teaspoon of sugar, 2 nos green chillies, roasted ground nuts, salt, lime juice, garlic and blend it into smooth mint chutney.
  5. Heat oil in a pan and add mustard seeds, green chillies, 125 ml of water, 1 teaspoon sugar, 1 pinch citric acid, little salt and mix thoroughly and boil it once.
  6. Pour this boiling water evenly on the dhokla.
  7. Now the khaman dhokla is ready to serve with mint chutney.
