EGGPLANT DALL 1

Ingredients used in EGGPLANT DALL 1
• Oil - 2 tablespoons.
• Mustard seeds - 1 tea spoon.
• Cumin seeds - 1 tea spoon.
• Garlic(crushed) - 8 cloves.
• Curry leaves - 2 springs.
• Onion (diced) - 1 number.
• Turmeric powder - 1/2 tea spoon.
• Eggplant - 200 grams.
• Amchur powder - 1 tea spoon.
• Chili powder - 1 tea spoon.
• Salt - to taste.
• Toor dal - 1/2 cup.
• Chana dal - 1/2 cup.
• Tomatoes - 2 numbers.
• Green chilies - 4-5 numbers.
Method:
  • Firstly boil the dal by adding tomatoes, green chilies, turmeric powder, salt and keep aside.
  • In a pan heat the oil, add mustard seeds, cumin seeds, garlic, curry leaves, onions, turmeric powder, eggplant pieces, amchur powder, chili powder, salt and cook it till they are soft by adding some water.
  • Now add dal mixture, and cook for another 4-5 minutes and serve hot with rice or rotis.
