Ingredients used in Easy Mushroom Biriyani
• Mushroom sliced - 1(1/2) cup.
• Basmati rice - 2 cup.
• Medium onions chopped - 3 no.
• Ginger garlic paste - 1 tablespoon.
• Medium tomatoes diced - 2 no.
• Green chillies grounded - 6 no.
• Shredded coconut - 1/2 cup.
• Ghee - 2 teaspoons.
• Salt - to taste.
• Chopped coriander (cliantro) leaves - 1 bunch.
• Chopped mint leaves - 1 bunch.
• Cinnamon stick - 1 small.
• Cloves - 5 no.
• Cardamom - 3 no.
Method:
  • Heat one tablespoon of ghee in a pan and saute onions and ginger garlic paste for 5 minutes . Then add the grounded green chillies and continue frying . Then add the tomatoes and fry till tomatoes are soft.
  • Then add the sliced mushrooms with salt and saute for another 5 minutes. Finally add the shredded coconut, powdered spices ,cilantro leaves and mint leaves and mix well and simmer till thick.
  • Heat the other tablespoon of ghee in a pot and add the rice.Stir fry till the rice is well coated with ghee and add 4 cups water. Cover and let it cook (You can add little turmeric powder for color and garam masala for taste at this point).
  • Once the rice is completely cooked, add the mushroom masala to the rice .Stir well and serve with raita and pickle.
