Ingredients used in DAL SULTANI
• Toor dal - 1 cup.
• Butter - 1 tablespoon.
• Ghee - 2 teaspoons.
• Cloves - 3 numbers.
• Cardamom - 5 numbers.
• Cumin seeds - 1/2 tea spoon.
• Garlic (chopped) - 4 cloves.
• Onion (chopped) - 1 number.
• Salt - to taste.
• Turmeric powder - 1 pinch.
• Green chilli - 3 numbers.
• Milk - 1/2 cup.
• Yogurt - 3/4 cup.
• Sugar - 1/2 tablespoons.
• Saffron water - 1 tea spoon.
• Cream - 1/4 cup.
• Spring onions - 1 tablespoon.
• Betel leaf - 2 numbers.
• Charcoal - 1 number.
• Garam masala - 1/2 tea spoon.
Method:
  • First, boil the tour dal and keep it aside. Heat butter and ghee in a pan add cloves, cardamom, cumin seeds when cumin seeds splutter and add chopped garlic, saute it then add chopped onions, salt, turmeric, green chili saute it for few minutes.
  • Then add boiled tour dal, once the dal is cooked add milk, beaten yogurt put the lid on and let it comes to boil.
  • Adjust the seasoning and add sugar, saffron water, cream, chopped spring onions.
  • In a steel bowl put the betel leaf and put this bowl on top of dal, and a small piece of charcoal on it, sprinkle garam masala powder while smoking pour 1 teaspoon of ghee on it and immediately cover it and switch off the flame and keep for ten minutes.
  • Remove the steel bowl and mix the dal once.

Serve it with rice.
