Ingredients used in BRINJAL MASALA DAL
• Oil - 2 tablespoons.
• Chana dal - 1 tea spoon.
• Coriander seeds - 1 tea spoon.
• Dry red chillies - 4 numbers.
• Cumin seeds - 1 tea spoon.
• Urad dal - 1 tea spoon.
• Garlic - 10 cloves.
• Curry leaves - 1 spring.
• Fresh coconut pieces - 1/2 cup.
• Hing - pinch.
• Mustard seeds - 1 tea spoon.
• Onion(chopped) - 1 number.
• Green chilies - 4 numbers.
• Turmeric powder - 1/4 tea spoon.
• Mini brinjal - 250 grams.
• Tomato - 2 numbers.
• Tarmarind juice - 1/2 cup.
• Jaggery - 1 tea spoon.
• Boiled toor dal - 1 cup.
• Salt - to taste.
Method:
  • Take a pan and add oil, chana dal, coriander seeds, cumin seeds, red chilies, urad dal, garlic, curry leaves and also add fresh coconut pieces, let this cook by adding little more hing and roast it well.
  • Put in a blender and make it to a coarse paste then keep aside.
  • Now add oil in a pan, heat it then add mustard seeds, cumin seeds, chopped onions, green chilies, turmeric powder, mini brinjal, saute all these nicely for few minutes.
  • Add salt (as per taste), coconut masala mixture, chopped tomato and also add tamarind juice, jaggery, mix it and cook it well.
  • Now add boiled toor dal, saute all these for few minutes.

Serve with hot rice.
