Bitter Melon Egg Bhurji

Ingredients used in Bitter Melon Egg Bhurji
• Bitter melon - 2 numbers.
• Salt - to taste.
• Turmeric powder - 1/2 teaspoons.
• Oil - 2-3 teaspoons.
• Cumin seeds - 1/2 teaspoons.
• Onions (chopped) - 1/2 cup.
• Curry leaves - 1 springs.
• Ginger garlic paste - 1/2 teaspoons.
• Red chilly powder - 1/2 teaspoons.
• Cumin powder - 1/4 teaspoons.
• Water - 1/4 cup.
• Tamarind juice - 1-2 teaspoons.
• Egg - 2 numbers.
Method:
  • Finely chop bitter melon into small pieces and add salt, turmeric powder and mix nicely and keep aside.
  • Heat oil in a pan, add cumin seeds, onions, curry leaves, salt and saute it.
  • Add ginger garlic paste, turmeric powder, red chilly powder, cumin powder, coriander powder and saute it.
  • Add little water, squeeze water from bitter melon and add to it and mix nicely.
  • Place lid and cook for 2-3 minutes on slow flame.
  • Add little tamarind juice and mix it. Add egg and keep mix it on high flame for 2 minutes. Switch off the flame and transfer into serving bowl.

Now Bitter Melon Egg Bhurji is ready to serve with roti.
