BABYEGG PLANT WITH COCONUT,PEANUTS MASALA FRY

Ingredients used in BABYEGG PLANT WITH COCONUT,PEANUTS MASALA FRY
• Baby egg plant - 1 cup.
• Dry red chilies - 5 numbers.
• Tarmarind - 1 teaspoons.
• Pepper - 1 tablespoons.
• Dry cococnut - 1 cup.
• Red capsicum - 2 numbers.
• Coriander powder - 1 tablespoons.
• Black pepper powder - 1 teaspoons.
• Onion - 1 numbers.
• Ginger garlic paste - 1 tablespoons.
• Turmeric - pinch.
• Sesame seeds - 1 tablespoons.
• Green chillies - 4 numbers.
• Salt as per taste - 0.
• Oil as required - 0.
Method:

1.Take a pan and add dry coconut pieces,peanuts,pepper corns,tarmarind,sesame seeds,

pinch of salt and just saute it nicely for few mins.

2.Then take electric blender and make it fine powder.

3.Take a pan heat the oil,then add mustard seeds, cumin seeds,chopped brinjal,

chopped onion,pinch of hing,pinch of turmeric,add 1tbsp of ginger garlic paste.

4.Add chopped green chillies,chopped coriander leaves,coriander powder,salt as

per taste.

5.Saute all these for 3 mins nicely.

6.Then add chopped capsicum.

7.we have already prepared at starting masala powder add it.

8.Then add pepper powder and serve with hot rice.
