Ingredients used in ALOO GOBI SAAG
• Spinach - 2 bunch.
• Ginger(chopped) - 1 piece.
• Garlic(chopped) - 7 numbers.
• Onions(chopped) - 2 numbers.
• Green chillies - 6 numbers.
• Nutmeg powder - 1 pinch.
• Coriander leaves - ½ bunch.
• Mint leaves - ½ bunch.
• Oil - 5 tablespoons.
• Salt - to taste.
• Potato pieces(fried) - 1 cup.
• Cauliflower(fried) - 1 cup.
• Turmeric powder - 1/4 tea spoon.
• Ginger garlic paste - 1 tea spoon.
• Tomatoes(finely chopped) - 1 cup.
• Garam masala - 1 pinch.
• Coriander powder - 1 tea spoon.
• Cumin powder - ½ tea spoon.
• Red chilly powder - 1 tea spoon.
Method:
  • Boil spinach in a pan then take it out and keep it aside.
  • Heat little oil in a pan and add ginger, garlic, green chilies, half of the onions, nutmeg powder, coriander leaves, mint leaves, spinach and switch off the flame then saute it.
  • Take the above mixture into a blender and blend it into a smooth green paste.
  • Heat some oil in a pan and add remaining onions, little salt, turmeric powder, ginger garlic paste and saute it.
  • Then add tomatoes, coriander powder, cumin powder, red chilly powder and mix thoroughly, then let it cook with a lid on it until the tomatoes are mashed and then add water.
  • Now add green paste and cook it.
  • Add fried potatoes and cauliflower pieces then mix thoroughly to cook it on a slow flame for 2 minutes.
  • Add garam masala and mix it well, then switch off the flame.

Now aloo gobi saag is ready to serve with naan or roti.
