Similar to Tomato Chuney on Add some carrots, Capsicum, some onions (optional), curry leaves along with tomatoes while cooking. Tastes great with idli, dosa, etc and very healthy too.

Recipe of Vegetable Chutney

Ingredient Name Quantity Unit
Cumin, mustard, salt, red chilly, green chilly, tamarind, turmeric, etc  1 To Taste
Curry leaves  1 Springs
Capsicum  1 Numbers
Tomatoes  4 Numbers
Carrots  1 Numbers

Prepare seasoning similar to tomato chuntney recipe shown on Add tomatoes, capsicum and carrot. Let the vegetables cook. Add curry leaves at the end and grind them together. Another variation is - dry roast some urad and channa dhals. One to 2 table spoons each. Add them while cooking vegetables (do not fry again in oil... just add after adding the vegetables). Grind after vegetables are cooked. It makes Chutney little thick. Tastes good with rice, chapathi, idli, dosa, etc.
