Recipe of SUJI IDLI

Ingredient Name Quantity Unit
Semolina (Suji) 1 Cup
Fresh Curd 1 Cup
Fruit Salt (Eno) 1 Teaspoons
Chopped Cabbage 1 Cup
Chopped Onion 1 Numbers
Chopped Coriander 2 Tablespoons
Curry Leaves To Taste
Chopped Green Chilies 2-3 Numbers
Salt To Taste

Directions

  • Roast the suji in pan withour oil till it changes it color to light pink on low flame.
  • Keep it aside.
  • When it gets cool, in a bowl take the curd and add semolina evenly.
  • Then add the fruit salt and the remaining ingredients.
  • In a pressure cooker put some water to boil.
  • Now put 1 spoonful of this batter in the idli maker slots.
  • Place this idli maker in the cooker and let it steam for 10 minutes.
  • Take it out and serve hot with green chutney.

water is not even important enough to be mentioned in ingredients list...

i dont understand this thats why i check 3 to 4 receipiel sitest u have not mentioned when to add water or water is to be added at all ? if a cook like me would make idli from this receipie would definatly make blunder n everybody would laugh... this receipie needs more clarity no joke putting anything

Ensure the Suji is properly done and is cool before is mixed with Curds. Have saur curd. Add pinch of baking Soda and or dry yeast. Mix suji, curd, soad and yeast and keep it for atleast 45 min. Add salt before you start making idlis.

I tried this recipe, my idlis however did not get soft and spongy. Can you please suggest how I can make theses soji idlis spongy. I added 1/4th tsp baking powder to get the effect, but still no use.
