Ingredients used in POTATO KOFTA BIRYANI
• Potatoes - 200 grams.
• Shahi jeera - 1/2 tea spoon.
• Cloves - 3 numbers.
• Cinnamon stick - 2 piece.
• Cashew nuts - 8-10 numbers.
• Onion - 1-2 numbers.
• Salt - 1 to taste.
• Ginger garlic paste - 1 tablespoon.
• Chilli powder - 1-1/2 tablespoon.
• Garam masala - 1/2 tea spoon.
• Chana powder - 1-2 tablespoons.
• Mint leaves(chopped) - 1 tablespoon.
• Coriander leaves(chopped) - 2 tablespoons.
• Cumin powder - 1/2 tea spoon.
• Fried onions - 1/4 cup.
• Oil - 2-3 tablespoons.
• Cardamom - 4 numbers.
• Turmeric powder - 1/2 tea spoon.
• Basmati ice - 2 cups.
• Ginger(chopped) - 1/2 tea spoon.
• Garlic(chopped) - 1 tea spoon.
• Corn flour - 1 tablespoon.
• Coriander powder - 1/2 tea spoon.
• Khoya - 1 tablespoon.
• Yogurt (curd) - 1 cup.
Method:
  • Heat oil in a pan add shahi jeera, cloves,cardamom, cinnamon, cashew nuts saute it for a minute then add onions pieces, salt,ginger garlic paste, turmeric powder saute it and 4 cups of water and 2 cups of soaked rice mix it once and cook till it is 90% cooked.
  • For making potato koftas.: In a blender add onion pieces, chopped ginger garlic, make it into a coarse paste.
  • In a bowl add boiled potatoes, prepared coarse paste, 1 tablespoon chilli powder, garam masala powder, chana powder, salt mix it well. And make it into a roundels and dip it into the slurry (cornstarch and water) and drop them in the hot oil.
  • Cook the koftas till it is brown in color and add mint leaves, coriander leaves toss it well.
  • In a bowl add curd, coriander powder, cumin powder, half teaspoon chilli powder mix it and pour this mixture to pan.
  • Add koya (optional) mix it and add 90%cooked rice and add fried onions let it cook for 3 minutes in a slow flame with the lid on.

Now potato kofta biryani is ready to Serve with Raita.
