Recipe of Poda Pitha
Grate half a coconut. Cut the other half into small pieces. Grind the rice to make powder out of it. Boil 2cups water and add salt, jaggery, anise, cardamoms. Add the powdered rice into it. Cook it for 15-20 minutes. Add the grated coconut and coconut pieces into it. Put 1/4cup ghee and mash it with hand to make a fine dough. Spread a plantain leaf over a tray and oil it thoroughly. Spread the dough over it and bake it in the oven. You can also prepare stuff out of cheese, grated coconut and sugar and put it inside the pitha to make a stuffed one.
